D.I.Y. White Wine - Day One

  1. Mash 2kg of green grapes with 400gm sugar, and then add 6L water.
  2. Boil the mixture. (the skins will float on the surface. Let it simmer for 15 minutes after boiling.
  3. Prepare a fermenter by sanitizing it.
  4. Mix 10gm of yeast in luke warm water. Let it sit for a few minutes before adding the yeast water with the boiled mixture into the fermenter.
  5. Seal the fermenter shut, with a small outlet for a tube. Insert one end of the tube in the fermenter(do not let it dip into the mixture), and make sure there isn't any air room around the tube.
  6. Dip the other end of the tube in a liquid disinfectant so as to avoid air flow.
  7. The carbon dioxide generated during fermentation will travel from the fermenter, through the tube and into the disinfectant.
  8. Place the fermenter in away from an light, and let it sit for 15-20 days


D.I.Y. Red Wine - Day One

  1. Blend 1kg of black grapes, 1cm of ginger, 2 sticks of cinnamon bark and a few tablespoons of honey in a mixer.
  2. Strain the mixture to remove grape skins and other insolubles.
  3. Boil the mixture and let it simmer for 10 minutes after boiling.
  4. Strain the boiled mixture through a finer sieve.
  5. Mix a tablespoon of yeast with warm water.
  6. Sanitize the fermenter and pour the strained grape mixture with the yeast water in the fermenter.
  7. Seal the fermenter shut, with a small outlet for a tube. Insert one end of the tube in the fermenter(do not let it dip into the mixture), and make sure there isn't any air room around the tube.
